Soft, chewy, and moist banana bread blondies made with ripe bananas, brown sugar, and butter for a rich, comforting dessert that’s easy to prepare in one bowl.

Ingredients

  • 2 ripe bananas, mashed
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the mashed bananas, brown sugar, granulated sugar, melted butter, egg, and vanilla extract until smooth.
  3. Add the flour, baking powder, and salt, stirring just until combined.
  4. Fold in walnuts or chocolate chips if using.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25–30 minutes, until golden on top and a toothpick inserted comes out with a few moist crumbs.
  7. Cool slightly, then slice into squares and serve.
