Super Easy Lemon Pepper Chicken Thighs are a quick, flavorful dinner made with juicy chicken thighs seasoned with zesty lemon pepper and garlic. Cooked in one pan for easy cleanup, this crispy, golden chicken is a go-to recipe for weeknights or meal prep.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 tablespoon lemon pepper seasoning
  • 1/2 teaspoon garlic powder
  • Salt, to taste (optional)
  • 1 tablespoon fresh lemon juice
  • Optional: 1 tablespoon chopped parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) if finishing in the oven.
  2. Pat chicken thighs dry with paper towels.
  3. Drizzle with olive oil and season with lemon pepper, garlic powder, and salt if needed.
  4. Heat an oven-safe skillet over medium-high heat. Sear chicken skin-side down for 4–5 minutes until golden and crispy.
  5. Flip chicken and transfer skillet to oven. Bake for 15–20 minutes, or until internal temperature reaches 165°F (74°C).
  6. Remove from oven, squeeze fresh lemon juice over the chicken, and sprinkle with parsley if using.
  7. Serve hot with your favorite sides.

Notes

  • Use boneless, skinless thighs for a faster version—reduce cook time by 5–10 minutes.
  • Add smoked paprika, honey, or red pepper flakes for variation.
  • Make it a one-pan meal by adding potatoes or zucchini before baking.
  • Reheat in a skillet or oven to keep the skin crispy—avoid microwaving if possible.
