  • 2 large eggs
  • 3/4 cup sugar
  • 1 1/2 cups all-purpose flour (or gluten-free 1:1 baking flour)
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a springform pan or cast-iron skillet.
  2. In a large bowl, whisk together melted butter, sugar, eggs, and vanilla until smooth and well combined.
  3. Stir in Greek yogurt until the mixture is creamy.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in chopped peaches and sliced strawberries, reserving a few pieces for topping.
  6. Pour the batter into the prepared pan, smoothing the top. Arrange reserved fruit on top.
  7. Bake for 60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan. Dust with powdered sugar before serving if desired.
