These Strawberry Kiss Cookies are soft, sweet, and perfectly festive, combining the fruity flavor of strawberry cake mix with a rich chocolate kiss center. Quick to make and adorable to serve, they’re ideal for Valentine’s Day, showers, or anytime you want a fun twist on blossom cookies.

Ingredients

  • 1 box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup granulated sugar (for rolling)
  • 24 chocolate kisses, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract (if using). Stir until a thick dough forms.
  3. Scoop tablespoon-sized portions of dough, roll into balls, and coat each in granulated sugar.
  4. Place dough balls a couple of inches apart on the baking sheet and bake for 8–10 minutes, until puffed and edges are set.
  5. Immediately press a chocolate kiss into the center of each cookie. Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Use white chocolate or flavored kisses for variation.
  • Roll in colored sanding sugar for extra sparkle.
  • Add strawberry extract for a more intense flavor.
  • Heart-shaped chocolates add a festive touch.
  • Chill dough briefly if it’s too sticky to handle.
