Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for rolling)
  • 1 tsp vanilla extract
  • 1/2 cup freeze-dried strawberries, finely crushed
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chips

Instructions

  1. Cream softened butter and 1/2 cup powdered sugar until smooth and fluffy.
  2. Mix in vanilla extract and crushed freeze-dried strawberries until evenly combined and pink.
  3. In a separate bowl, whisk together flour and salt. Gradually add to the butter mixture until a soft dough forms.
  4. Stir in mini chocolate chips until just incorporated.
  5. Roll dough into 1-inch balls and place on a lined baking sheet. Chill for 30 minutes.
  6. Preheat oven to 350°F (175°C). Bake chilled dough balls for 12–14 minutes, until set and bottoms are lightly golden.
  7. Cool cookies slightly, then roll in powdered sugar while warm. Cool completely and roll again for full coverage.
