Steakhouse-style creamed spinach gratin is a luxurious and comforting side dish made with tender spinach in a rich, cheesy cream sauce, topped with golden breadcrumbs. It’s perfect for pairing with steak, chicken, or a holiday spread.

Ingredients

  • 1 1/2 lbs fresh spinach or 1 lb frozen spinach (thawed and squeezed dry)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup Gruyère or Parmesan cheese, shredded (plus extra for topping)
  • 1/4 tsp ground nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1/3 cup breadcrumbs or panko (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and butter a baking dish.
  2. In a large skillet, melt butter over medium heat. Sauté garlic and shallot until softened, about 2–3 minutes.
  3. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in milk and cream. Cook, stirring, until sauce thickens, about 5 minutes.
  5. Add nutmeg, salt, and pepper. Stir in shredded cheese until melted and smooth.
  6. Fold in spinach and stir until well combined and heated through.
  7. Transfer mixture to prepared baking dish. Top with breadcrumbs and additional cheese if desired.
  8. Bake for 20–25 minutes, until golden and bubbly. Let rest a few minutes before serving.

Notes

  • Add mushrooms or caramelized onions for extra flavor.
  • Swap cheese with white cheddar or fontina for variation.
  • Make gluten-free by using cornstarch and GF breadcrumbs.
  • Add a pinch of cayenne for heat.
  • Can be made ahead and baked just before serving.
