This Steak and Queso Rice is a bold, cheesy, and satisfying skillet meal made with juicy seared sirloin, creamy queso, fluffy rice, and Tex-Mex spices. Ready in just 35 minutes, it’s a quick and comforting dinner perfect for busy nights or casual entertaining.

Ingredients

  • 1 lb sirloin steak
  • 1 cup queso cheese (Monterey Jack or cheddar)
  • 1 cup cooked long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: chopped cilantro, sour cream, sliced avocado

Instructions

  1. Prep Ingredients: Dice the onion and bell pepper; mince the garlic.
  2. Cook the Steak: Heat olive oil in a large skillet over medium-high heat. Season steak with salt and pepper. Sear for 4–5 minutes per side, then remove and let rest.
  3. Sauté Veggies: In the same pan, sauté onion and bell pepper for 3–4 minutes. Add garlic and cook for 1 more minute.
  4. Add Rice and Spices: Stir in cooked rice, paprika, cumin, chili powder, and additional salt and pepper. Mix well.
  5. Add Queso: Stir in queso cheese until melted and creamy.
  6. Slice and Combine: Thinly slice the rested steak and stir it into the skillet with the queso rice. Heat through.
  7. Serve: Serve hot with desired toppings like cilantro, sour cream, or avocado.
