Ingredients

  • 1 cup unsalted butter
  • 1/2 cup pumpkin purée (not pumpkin pie filling)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • Optional for decorating:
  • Melted white chocolate or royal icing
  • Candy eyes or mini chocolate chips

Instructions

  1. Brown the butter in a saucepan over medium heat until golden and nutty. Let it cool slightly.
  2. In a large mixing bowl, combine browned butter, brown sugar, granulated sugar, pumpkin purée, egg yolk, and vanilla. Mix until smooth.
  3. In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  4. Gradually stir the dry ingredients into the wet mixture to form a soft dough.
  5. Chill dough in the refrigerator for 30–60 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop dough onto baking sheet and bake for 10–12 minutes, until set but soft in the center.
  8. Cool completely before decorating.
  9. Decorate with melted white chocolate or icing in ghost shapes. Add candy eyes for extra spookiness!
