Ingredients
4 boneless, skinless chicken breasts or thighs
1 cup fresh pineapple, diced
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons honey
1–2 tablespoons chili sauce or hot sauce
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup fresh pineapple, finely chopped (for salsa)
1/4 cup red onion, finely chopped
1 small jalapeño, finely chopped (optional)
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice (for salsa)
1/4 teaspoon salt (for salsa)
Instructions
Season the chicken with salt and black pepper.
In a bowl, mix soy sauce, honey, chili sauce, garlic, and lime juice to make the glaze.
Heat olive oil in a pan over medium heat and cook the chicken until golden and fully cooked.
Pour the glaze over the chicken and let it simmer until thickened and well coated.
In a separate bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, and salt to make the salsa.
Serve the glazed chicken topped with fresh pineapple salsa.
Notes
