Ingredients

  • 1 lb ground beef
  • 3 cups cooked white rice (jasmine or basmati)
  • 1 1/2 cups broccoli florets
  • 1 carrot, thinly sliced or julienned
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger (optional)
  • 3 tablespoons soy sauce
  • 12 tablespoons sriracha or chili garlic sauce (adjust to taste)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 green onions, chopped (for garnish)
  • 1 teaspoon toasted sesame seeds (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon cooking oil (vegetable or avocado oil)

Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a small bowl, whisk together soy sauce, sriracha, brown sugar, rice vinegar, and sesame oil to make the stir-fry sauce.
  3. Heat oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it apart, until browned and cooked through. Season with salt and pepper.
  4. Pour the stir-fry sauce over the beef. Simmer for 2-3 minutes until the sauce thickens and coats the meat.
  5. In a separate pan, heat oil and sauté garlic. Add broccoli, carrots, and bell pepper. Stir-fry until vegetables are tender-crisp, adding a splash of water to steam if needed.
  6. Assemble the bowls: start with a scoop of rice, then top with spicy beef and garlic veggies.
  7. Garnish with chopped green onions and sesame seeds before serving.
