This Spicy Garlic Butter Shrimp & Baby Bok Choy is a quick, flavorful weeknight meal featuring juicy shrimp in a buttery garlic sauce with a spicy kick, paired with tender, pan-seared baby bok choy. Ready in under 30 minutes, it’s low-carb, high-protein, and full of umami flavor.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tbsp soy sauce
  • 1 tbsp fresh lemon juice
  • 1 lb baby bok choy, halved lengthwise
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Heat olive oil and 1 tbsp butter in a large skillet over medium heat.
  2. Sauté garlic and red pepper flakes for 1 minute, until fragrant.
  3. Add shrimp, season with salt and pepper, and cook for 2–3 minutes, flipping once.
  4. Stir in soy sauce and lemon juice, then transfer shrimp to a plate.
  5. In the same skillet, melt remaining butter. Add bok choy cut-side down. Cook 3–4 minutes until tender.
  6. Return shrimp to skillet and toss everything together.
  7. Serve hot, garnished with chopped green onions.

Notes

  • Marinate shrimp in soy sauce and lemon juice for extra flavor.
  • Substitute baby bok choy with spinach, kale, or broccolini.
  • Add mushrooms or a splash of sesame oil for a richer taste.
