A warm and nourishing spiced carrot and lentil soup made with sweet carrots, hearty red lentils, and aromatic spices. This comforting soup is wholesome, flavorful, and perfect for a cozy meal.

Ingredients

  • 4 medium carrots, chopped
  • 1 cup red lentils
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook for about 3–4 minutes until soft and fragrant.
  3. Stir in the minced garlic and ginger and cook for another minute.
  4. Add the chopped carrots, cumin, coriander, turmeric, and paprika. Cook for 2 minutes while stirring so the spices release their aroma.
  5. Add the red lentils and pour in the vegetable broth.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25 minutes until the carrots and lentils are tender.
  7. Use an immersion blender to blend the soup until smooth and creamy, or leave it slightly chunky if preferred.
  8. Season with salt, black pepper, and lemon juice.
  9. Serve warm and garnish with chopped fresh cilantro.

Notes

  • Add coconut milk for a creamier texture and subtle sweetness.
  • Diced potatoes or sweet potatoes can be added for extra heartiness.
  • A pinch of chili flakes adds a gentle heat.
  • If the soup becomes too thick, add a little water or broth when reheating.
