A warm and comforting Southern-style dessert made with sweet ripe bananas baked beneath a golden, buttery cobbler topping for a soft, rich, and cozy treat.

Ingredients

  • 4 ripe bananas, sliced
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a bowl, gently toss the sliced bananas with lemon juice and spread them evenly in the prepared baking dish.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  4. Stir in milk, melted butter, and vanilla extract until a smooth batter forms.
  5. Pour the batter evenly over the bananas, spreading gently if needed.
  6. Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the topping comes out clean.
  7. Allow the cobbler to cool slightly before serving so the filling can set.

Notes

  • Very ripe bananas provide the best sweetness and flavor.
  • Add chopped pecans or walnuts for extra texture.
  • Sprinkle brown sugar over the bananas for deeper caramelized flavor.
  • Mix in shredded coconut for a tropical variation.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Freeze tightly wrapped for up to 2 months and thaw overnight before reheating.
