Golden, fluffy sourdough fritter bites studded with juicy peaches and warm spices—crispy outside, tender inside, and perfect for snacking, brunch, or dessert.

Ingredients

  • 1 cup sourdough discard (unfed, room temperature)
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg (optional)
  • 1 large egg
  • 1/4 cup milk or buttermilk
  • 1 tsp vanilla extract
  • 1 cup diced peaches (fresh, canned and drained, or frozen and thawed)
  • Oil for frying (vegetable or canola)
  • Powdered sugar or glaze for topping (optional)

Instructions

  1. Heat frying oil in a deep pan to 350°F (175°C).
  2. Whisk sourdough discard, egg, milk, sugar, and vanilla until smooth.
  3. Stir in flour, baking powder, salt, cinnamon, and nutmeg until just combined.
  4. Fold in diced peaches.
  5. Drop spoonfuls of batter into hot oil and fry 3–4 minutes, turning occasionally, until golden and cooked through.
  6. Transfer fritters to a paper towel-lined plate.
  7. Dust with powdered sugar or drizzle with glaze while warm.

Notes

  • Add chopped pecans or walnuts for crunch.
  • Use diced apples or pears instead of peaches for seasonal variations.
  • Add cardamom or allspice for extra spice.
  • Coat in cinnamon-sugar or drizzle with maple glaze for a fall twist.
