A hearty, smoky cowboy soup loaded with protein, beans, and vegetables, delivering bold, comforting flavor in a single pot.

Ingredients

  • 12 oz smoked sausage, sliced
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: shredded cheese, fresh herbs

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and chopped onion and cook until browned and fully cooked.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add sliced smoked sausage and cook for 2–3 minutes to release flavor.
  5. Stir in diced tomatoes, tomato paste, beans, corn, beef broth, smoked paprika, chili powder, cumin, salt, and black pepper.
  6. Bring to a gentle simmer, then reduce heat to low.
  7. Simmer for 25–30 minutes, stirring occasionally, until slightly thickened and well blended.
  8. Serve warm with optional toppings if desired.
