These Smashburger Quesadillas combine juicy seasoned ground beef with melty cheddar and mozzarella cheese, all folded inside a crispy golden tortilla and topped with classic burger fixings for the ultimate comfort food mashup.

Ingredients

  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup burger sauce or mayonnaise
  • 2 tbsp butter or oil for cooking

Instructions

  1. Preheat a large skillet or griddle over medium-high heat.
  2. Divide the ground beef into 4 thin portions and press each portion directly onto one side of each tortilla, spreading evenly to the edges.
  3. Season the beef evenly with salt, black pepper, garlic powder, and onion powder.
  4. Place the tortillas beef-side down onto the hot skillet and cook for 4–5 minutes until the beef develops a browned crust and cooks through.
  5. Flip each tortilla so the beef side is facing up. Sprinkle cheddar and mozzarella cheese evenly over the cooked beef.
  6. Fold each tortilla in half and continue cooking for 2–3 minutes per side until the tortilla is golden and crispy and the cheese is fully melted.
  7. Remove from the skillet and let rest for 1 minute before slicing.
  8. Add diced onions, pickles, lettuce, tomatoes, and a drizzle of burger sauce before serving, or serve toppings on the side.

  • Swap cheddar for pepper jack cheese for a spicy kick.
