Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional Garnish:
  • Sliced green onions
  • Sesame seeds

Instructions

  1. Place the chicken in a single layer at the bottom of the slow cooker.
  2. In a bowl, whisk together honey, soy sauce, ketchup, minced garlic, grated ginger, vinegar, sesame oil, and black pepper until well combined.
  3. Pour the sauce evenly over the chicken.
  4. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and set aside.
  6. In a small bowl, mix cornstarch and water to create a slurry. Stir it into the sauce in the slow cooker.
  7. Cook on high for 15–20 minutes until the sauce thickens.
  8. Return the chicken to the slow cooker and spoon the thickened sauce over it.
  9. Garnish with sliced green onions and sesame seeds before serving.

  • Thaw chicken before slow cooking for even cooking and food safety.
  • Add broccoli, bell peppers, or snap peas during the last hour for a complete meal.
  • For shredded chicken, shred directly in the sauce before serving.
