Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (15 ounces) crushed tomatoes
  • ½ cup tomato sauce
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 1 tablespoon olive oil

Instructions

  1. Lightly grease the slow cooker with olive oil.
  2. Season chicken breasts with salt, black pepper, and Italian seasoning.
  3. Place chicken in the slow cooker and top with chopped onion and minced garlic.
  4. Pour in crushed tomatoes, tomato sauce, and chicken broth.
  5. Cover and cook on low for 5–6 hours or on high for 3–4 hours, until chicken is tender and fully cooked.
  6. About 20 minutes before serving, stir in heavy cream and grated Parmesan cheese.
  7. Sprinkle fresh basil over the dish just before serving and spoon sauce over the chicken.

Notes

  • Boneless, skinless chicken thighs can be used for extra tenderness.
  • Add spinach during the last 15 minutes for extra vegetables.
  • Use half-and-half for a lighter sauce or add cream cheese for extra richness.
  • Remove lid during the final 20–30 minutes to thicken the sauce if desired.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
  • Reheat gently with a splash of broth or cream if the sauce thickens too much.
