Slow Cooker Beef Manhattan is a comforting, hearty Midwestern dish featuring tender beef slow-cooked in savory gravy and served over creamy mashed potatoes with garlic bread. This easy, budget-friendly recipe is perfect for busy weeknights or cozy family dinners.

Ingredients

  • 2 to 3 lbs beef chuck roast, cut into large chunks
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • ¼ cup apple cider vinegar
  • 4 cups prepared mashed potatoes
  • 6 to 8 slices prepared garlic bread

Instructions

  1. Place beef chunks in a 4-quart slow cooker.
  2. Sprinkle onion soup mix and brown gravy mix evenly over the beef.
  3. Pour apple cider vinegar over the meat.
  4. Cover and cook on low for 7–8 hours, until the beef is fork-tender and shreds easily.
  5. Serve shredded beef and gravy over mashed potatoes. Add garlic bread on the side or underneath for open-faced style.

Notes

  • Add vegetables like carrots, mushrooms, or peas during the last 2 hours of cooking.
  • For spice, mix in hot sauce or red pepper flakes.
  • Use sourdough or dinner rolls instead of garlic bread for variation.
  • Store leftovers for up to 4 days in the fridge; freeze beef and gravy (not mashed potatoes or bread) for up to 3 months.
  • Reheat beef in a saucepan with a splash of broth or water.
