A tender and flavorful slow cooker beef brisket made with savory seasonings and rich sauce, cooked low and slow until perfectly fork-tender and juicy.

Ingredients

  • 3 to 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup barbecue sauce or tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Pat the brisket dry with paper towels and season generously on both sides with salt, black pepper, paprika, and thyme.
  2. Heat olive oil in a large skillet over medium-high heat and sear the brisket for 3–4 minutes per side until browned.
  3. Place the sliced onions and minced garlic in the bottom of the slow cooker.
  4. Lay the seared brisket on top of the onions.
  5. In a bowl, mix together the beef broth, barbecue sauce (or tomato sauce), Worcestershire sauce, and brown sugar.
  6. Pour the sauce mixture over the brisket, ensuring it is well coated.
  7. Cover and cook on low for 8–10 hours or on high for 4–5 hours, until the brisket is fork-tender.
  8. Let the brisket rest for 10–15 minutes before slicing against the grain. Spoon cooking juices over the top before serving.

Notes

  • Searing the brisket enhances flavor but can be skipped if short on time.
  • Add carrots and potatoes to the slow cooker for a complete one-pot meal.
  • For bolder flavor, add a splash of apple cider vinegar or a teaspoon of mustard.
  • Use smoked paprika or a small amount of liquid smoke for a smoky twist.
