These Slow Cooked Sirloin Bites are melt-in-your-mouth tender and packed with savory flavor thanks to a buttery au jus gravy. This easy slow cooker beef recipe is perfect for busy weeknights or comforting weekend meals—just set it and forget it for the ultimate cozy dinner.

Ingredients

  • 2 lbs sirloin steak, cut into bite-sized pieces
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 sweet onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 ½ cups unsalted beef stock or broth
  • 1 packet au jus gravy mix
  • 4 tbsp unsalted butter, sliced
  • Optional: fresh chopped parsley for garnish

Instructions

  1. Season the sirloin with salt and pepper.
  2. In a skillet over medium-high heat, heat olive oil and sear the steak in batches until browned. Transfer to a 6-quart slow cooker.
  3. Add the sliced onions and garlic over the beef.
  4. Pour in the beef stock, sprinkle the au jus mix evenly, and top with butter slices.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until beef is fork-tender.
  6. Optional: Stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) in the last 30 minutes to thicken.
  7. Garnish with parsley and serve hot.

  • Use chuck roast or stew meat for a more budget-friendly version.
  • Add mushrooms or carrots for extra heartiness.
  • Red wine can replace ¼ cup broth for deeper flavor.
