Ingredients

  • 5 cups mixed salad greens
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and thoroughly dry the salad greens to keep them crisp.
  2. Place the greens in a large salad bowl.
  3. Add the sliced cucumber, halved cherry tomatoes, and thinly sliced red onion.
  4. In a small bowl, whisk together olive oil, lemon juice or vinegar, salt, and black pepper to create a simple vinaigrette.
