A light and refreshing arugula salad made with peppery fresh greens, a simple lemon and olive oil dressing, and shaved parmesan cheese. This quick and versatile salad pairs perfectly with grilled meats, pasta, or roasted vegetables.

Ingredients

  • 4 cups fresh arugula
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ cup shaved parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons toasted pine nuts (optional)
  • Cherry tomatoes, halved (optional)

Instructions

  1. Rinse the arugula thoroughly and dry it well so the dressing coats the leaves properly.
  2. Place the arugula in a large salad bowl.
  3. In a small bowl, whisk together the olive oil and fresh lemon juice.
  4. Season the dressing with a pinch of salt and black pepper.
  5. Drizzle the dressing over the arugula and gently toss until the leaves are evenly coated.
  6. Sprinkle the shaved parmesan cheese over the salad.

  8. Toss lightly once more and serve immediately.
