Ingredients

  • 1/2 lb cooked shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp lime juice (plus more for serving)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 cups cooked rice (white, brown, or cauliflower) or mixed greens
  • Optional toppings: sour cream, hot sauce, extra lime wedges

Instructions

  1. In a bowl, combine mango, avocado, red onion, jalapeño (if using), cilantro, lime juice, olive oil, salt, and pepper. Gently mix to keep avocado chunky.
  2. Season shrimp with salt, pepper, and a squeeze of lime. If using raw shrimp, sauté in a little olive oil for 2–3 minutes per side until pink and cooked through.
  3. Divide rice or greens into serving bowls.
  4. Top with shrimp and a generous scoop of mango avocado salsa.
  5. Add optional toppings like sour cream or hot sauce and serve immediately.
