Sesame Beef Stir-Fry Noodles is a fast and flavorful one-pan meal with tender beef, vibrant veggies, and slurp-worthy noodles tossed in a savory sesame-soy sauce. Perfect for a satisfying weeknight dinner or easy meal prep!

Ingredients

  • For the beef & marinade:
  • ¾ lb beef sirloin or flank steak, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon brown sugar or honey
  • For the stir-fry sauce:
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • For the noodles & stir-fry:
  • 8 oz noodles (udon, rice noodles, or spaghetti)
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds

Instructions

  1. In a bowl, marinate the sliced beef with soy sauce, sesame oil, garlic, ginger, and brown sugar for 15–20 minutes.
  2. Meanwhile, cook noodles according to package instructions. Drain and set aside.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water to make the stir-fry sauce.
  4. Heat vegetable oil in a large skillet or wok over high heat. Cook beef in batches for 1–2 minutes per side until browned. Remove and set aside.
  5. In the same pan, stir-fry broccoli, bell pepper, and carrots for 3–4 minutes until crisp-tender.
  6. Return beef to the pan, add cooked noodles, and pour in the stir-fry sauce. Toss everything together until evenly coated and heated through.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • Swap beef with chicken, shrimp, or tofu.
  • Use any mix of veggies: snow peas, zucchini, or mushrooms work great.
  • Add chili flakes or chili garlic sauce for heat.
  • For gluten-free, use tamari or coconut aminos and gluten-free noodles.
  • Stir-fry quickly over high heat to keep beef tender and veggies crisp.
