Ingredients

  • 1 lb sea scallops, patted dry
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1/3 cup dry white wine
  • 1/2 cup heavy cream
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Optional: 2 tbsp grated Parmesan or a pinch of red pepper flakes

Instructions

  1. Pat scallops dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear scallops for about 2 minutes per side, until golden with a nice crust. Remove from pan and set aside.
  4. Lower heat and melt butter in the same skillet. Add garlic and shallots, sauté for 1 minute until fragrant.
  5. Pour in white wine and simmer for 2–3 minutes to reduce.
  6. Stir in heavy cream and lemon juice. Simmer gently for 2–3 minutes until slightly thickened.
  7. Return scallops to the pan to warm through for 1 minute.
  8. Serve immediately, spooning sauce over scallops and garnishing with parsley.

  • Substitute white wine with chicken or vegetable broth if needed.
