A light Mediterranean-style baked haddock dish with juicy tomatoes, garlic, herbs, and olive oil that creates a fresh and flavorful seafood meal.

Ingredients

  • 4 haddock fillets (about 1 1/2 pounds)
  • 1 1/2 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 small red onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/3 cup kalamata olives, sliced (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Arrange the haddock fillets in the baking dish.
  3. Season the fish with salt, black pepper, oregano, and paprika.
  4. In a bowl, combine cherry tomatoes, sliced red onion, minced garlic, olive oil, and lemon juice.
  5. Mix the vegetables well so they are evenly coated with the oil and lemon juice.
  6. Spoon the tomato mixture over and around the haddock fillets.
  7. If using olives, scatter them across the dish.
  8. Bake for 15 to 20 minutes until the fish becomes opaque and flakes easily with a fork.
  9. Remove from the oven and sprinkle with fresh parsley.
  10. Finish with an extra squeeze of lemon juice before serving.

Notes

  • Cod or halibut can be substituted for haddock.
  • Add sliced zucchini or bell peppers for extra vegetables.
  • Sprinkle feta cheese on top during the last few minutes of baking for a creamy Mediterranean touch.
  • Toasted breadcrumbs can be added for a light crispy topping.
  • Fresh herbs like dill or basil can also enhance the flavor.
