Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil or butter
  • 2 cloves garlic, minced
  • 1/2 cup beef broth (or chicken broth)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 cup shredded mozzarella or Gruyère cheese
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-low heat and sauté the sliced onions for 25–30 minutes until golden and caramelized.
  3. Add garlic, balsamic vinegar, and thyme. Cook for 1 minute.
  4. Pour in broth to deglaze the skillet, scraping up any browned bits. Simmer for 5 minutes.
  5. Season chicken breasts with salt and pepper and place in a baking dish.
  6. Spoon the caramelized onion mixture evenly over the chicken, then top with shredded cheese.
  7. Bake uncovered for 25–30 minutes, or until the chicken reaches 165°F (74°C) and the cheese is golden and bubbly.
  8. Let rest for 5 minutes. Garnish with fresh parsley if desired and serve.
