Sautéed Garlic Herb Tuscan Salmon is a quick and elegant one-pan meal featuring perfectly seared salmon fillets in a creamy garlic Parmesan sauce with cherry tomatoes, spinach, and fresh basil. Rich, flavorful, and ready in 30 minutes, it’s ideal for weeknights or special dinners.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 1 teaspoon Italian seasoning
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese, grated
  • ¼ cup fresh basil, chopped

Instructions

  1. Season salmon with salt and pepper. Heat olive oil in a skillet over medium heat.
  2. Sear salmon, skin-side down first, for about 4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté garlic and onion until soft and translucent.
  4. Add cherry tomatoes and spinach. Cook until spinach wilts. Stir in Italian seasoning, cream, and Parmesan. Simmer 3–4 minutes until slightly thickened.
  5. Return salmon to skillet and spoon sauce over the top. Simmer 2–3 minutes to warm through.
  6. Garnish with fresh basil and serve hot.

Notes

  • Use coconut cream and nutritional yeast for a dairy-free version.
  • Add mushrooms for more umami flavor.
  • A pinch of red pepper flakes adds a nice kick to the sauce.
  • Serve over pasta, rice, or mashed potatoes for a complete meal.
