  • 1 banana, sliced
  • 2 teaspoons chia seeds
  • Ground cinnamon, to taste
  • Sea salt, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or foil.
  2. Prick each sweet potato several times with a fork and place on the baking sheet. Roast for 45–60 minutes until fork-tender. Let cool for 5–10 minutes.
  3. Slice each sweet potato open lengthwise. Sprinkle with a pinch of sea salt.
  4. Drizzle almond butter inside the sweet potatoes, then top with banana slices, chia seeds, and a dash of cinnamon.
  5. Serve warm and enjoy immediately for best texture and flavor.

Notes

  • Try peanut, cashew, or sunflower seed butter as an alternative to almond butter.
  • Swap banana for berries, apple slices, or pomegranate seeds.
  • Top with chopped nuts or cacao nibs for added crunch.
  • Add a drizzle of honey or maple syrup for extra sweetness.
  • Toasted coconut flakes add a tropical twist.
