Roasted Sweet Potato Rounds with Honey & Feta are a simple yet elegant appetizer or side dish featuring caramelized sweet potato slices topped with salty feta and a sweet drizzle of honey.

Ingredients

  • 2 large sweet potatoes, sliced into ½-inch rounds
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese
  • 2 tbsp honey (for drizzling)
  • Optional: 1 tsp fresh thyme or rosemary, 2 tbsp chopped walnuts

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into ½-inch thick rounds.
  3. Toss sweet potato slices with olive oil, salt, and pepper until evenly coated.
  4. Arrange the rounds in a single layer on the prepared baking sheet.
  5. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
  6. Transfer roasted rounds to a serving platter while still warm.
  7. Top with crumbled feta cheese and drizzle with honey.
  8. Garnish with fresh herbs or chopped walnuts if desired.
  9. Serve warm or at room temperature.

Notes

  • Add cinnamon or smoked paprika before roasting for extra flavor.
  • Goat cheese or balsamic glaze can be used as tasty alternatives to feta and honey.
  • Reheat leftovers in the oven and add toppings fresh before serving.
  • Air fryer method: cook at 375°F (190°C) for 10–12 minutes, flipping once.
