Tender Roasted Garlic Green Beans with slightly crisp edges and rich, savory flavor. This simple oven-roasted side dish brings out the natural sweetness of fresh green beans and pairs perfectly with almost any meal.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice (optional)
  • Optional Garnish:
  • Grated Parmesan cheese
  • Toasted sliced almonds
  • Lemon zest

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Spread trimmed green beans evenly on the baking sheet.
  3. Drizzle with olive oil and sprinkle minced garlic, salt, and black pepper over the top.
  4. Toss directly on the pan to coat evenly, then arrange in a single layer.
  5. Roast for 15–20 minutes, stirring halfway through, until tender and lightly browned on the edges.
  6. Remove from oven and drizzle with lemon juice if desired.
  7. Add optional garnishes just before serving.

Notes

  • Avoid overcrowding the pan to ensure proper roasting.
  • Add garlic during the last 5–7 minutes if concerned about burning.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat in the oven to help restore texture.
  • Frozen green beans should be thawed and patted dry before roasting.
