A light and flavorful tilapia dish simmered in a silky roasted red pepper sauce. This elegant yet quick recipe comes together in just 25 minutes, making it perfect for a healthy and satisfying weeknight dinner.

Ingredients

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 jar (12 ounces) roasted red peppers, drained
  • 1/2 cup heavy cream
  • 1/4 cup vegetable or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian seasoning
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the tilapia fillets dry and season both sides with salt, pepper, and paprika.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook the tilapia for 3–4 minutes per side until it flakes easily with a fork. Remove from skillet and set aside.
  3. Add the remaining olive oil to the same skillet and sauté minced garlic for about 30 seconds until fragrant.
  4. Blend the roasted red peppers with the broth until smooth. Pour the mixture into the skillet, stir in Italian seasoning, and simmer for 5 minutes.
  5. Reduce heat to low and stir in heavy cream and lemon juice. Simmer gently for 2–3 minutes until slightly thickened.
  6. Return the tilapia to the skillet, spoon sauce over the fillets, and simmer for 2 minutes to combine flavors.
  7. Garnish with fresh parsley if desired and serve warm.
