Fresh and flavorful Mediterranean chicken tacos made with juicy seasoned chicken, crisp vegetables, and a creamy yogurt sauce, all wrapped in soft tortillas.

Ingredients

  • 68 tortillas (flour or whole wheat)
  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, finely chopped
  • 1 cup lettuce or greens
  • 1/2 cup Greek yogurt
  • 1 tbsp tahini (optional)
  • 1 tbsp lemon juice (for sauce)
  • 1 garlic clove, minced (for sauce)
  • 1/4 tsp salt (for sauce)
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp fresh parsley or dill, chopped

Instructions

  1. In a bowl, season the diced chicken with olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper.
  2. Heat a pan over medium heat and cook the chicken until golden and fully cooked. Set aside.
  3. In a small bowl, mix Greek yogurt, lemon juice, minced garlic, salt, and tahini (if using) to make the creamy sauce.
  4. Prepare the topping by combining cucumber, cherry tomatoes, and red onion in a bowl.
  5. Warm the tortillas in a pan or microwave.
  6. Fill each tortilla with cooked chicken, fresh vegetable mixture, and lettuce or greens.
  7. Drizzle with the yogurt sauce and top with crumbled feta cheese.
  8. Garnish with chopped parsley or dill and serve immediately.
