A playful twist on traditional focaccia, this Quick Jam Donut Focaccia combines pillowy bread with sweet jam pockets and a sugary topping—perfect for brunch or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons olive oil (plus more for greasing)
  • 1/3 cup fruit jam or preserves (e.g., raspberry, strawberry, apricot)
  • 2 tablespoons butter, cut into small pieces
  • 2 tablespoons granulated sugar or cinnamon sugar for topping

Instructions

  1. In a large bowl, mix flour, instant yeast, sugar, and salt.
  2. Add warm water and olive oil. Stir until a sticky dough forms.
  3. Cover and let rise in a warm spot for 45 minutes or until puffy.
  4. Preheat oven to 375°F (190°C) and oil an 8×8-inch baking pan.
  5. Transfer dough to the pan and gently press it to the edges.
  6. Use your fingers to dimple the surface. Spoon small amounts of jam into the dimples, spreading slightly.
  7. Dot the surface with butter pieces and sprinkle generously with sugar or cinnamon sugar.
  8. Let rest for 10 minutes, then bake for 18–22 minutes or until golden and fluffy.
  9. Cool slightly before slicing to allow the jam to set.
