A bold and flavorful cowboy butter chicken dish featuring tender pan-seared chicken coated in a rich garlic herb butter sauce with bright lemon and a hint of spice. This quick one-skillet recipe is perfect for busy weeknights when you want something comforting and satisfying.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, paprika, and onion powder.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken for 5–7 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Reduce heat slightly and add butter to the same skillet. Once melted, stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Whisk in Dijon mustard, lemon juice, red pepper flakes, dried parsley, and thyme. Simmer gently for 2–3 minutes to combine flavors.
  5. Return chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes so the chicken absorbs the sauce.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

  • Slice chicken into strips before cooking for faster preparation.
  • Stir in a splash of heavy cream for a creamier sauce.
  • Add spinach, green beans, or asparagus directly into the skillet for extra vegetables.
  • Add extra lemon zest before serving for brighter citrus flavor.
  • Substitute chicken thighs for a juicier option.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat gently with a splash of broth or water to keep chicken moist.
