Ingredients

  • Pumpkin purée
  • All-purpose flour
  • Baking soda

  • Brown sugar
  • Granulated sugar

  • Vanilla extract
  • Graham crackers, crushed
  • Mini marshmallows
  • Chocolate chips or chopped chocolate

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, pumpkin spice, and salt.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in pumpkin purée, egg, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Fold in crushed graham crackers and chocolate chips or chunks.
  7. Scoop dough onto the baking sheet. Press a few mini marshmallows on top of each cookie.
  8. Bake 10–12 minutes, until edges are set but centers remain soft.
  9. Cool slightly and enjoy while warm for melty, gooey s’mores flavor.
