Ingredients

  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 2 cups apple juice or apple cider
  • 1 cup apricot nectar or peach juice
  • 23 tbsp brown sugar or maple syrup (to taste)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp allspice or cloves (optional)
  • 1 tbsp lemon juice (to brighten)
  • Water (optional, to thin as needed)

Instructions

  1. In a blender, combine pumpkin purée, apple juice or cider, apricot nectar or peach juice, brown sugar or maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and allspice (if using).
  2. Blend until smooth and well combined.
  3. Taste and adjust sweetness, spice levels, or acidity with additional sugar or lemon juice.
  4. For a chilled version: Pour into a pitcher and refrigerate for at least 1 hour. Serve over ice.
  5. For a warm version: Pour into a saucepan and heat gently over low to medium heat (do not boil). Stir occasionally and serve warm.
