Pumpkin Bars are a soft, moist fall dessert packed with warm spices and topped with rich cream cheese frosting. Easy to make in one pan and perfect for gatherings or cozy nights in, these pumpkin bars deliver the best of autumn flavor in every bite.

Ingredients

  • For the Bars:
  • All-purpose flour
  • Ground cinnamon
  • Baking soda
  • Salt
  • Ground ginger
  • Ground nutmeg
  • Pumpkin puree (100% pure, not pumpkin pie filling)
  • Granulated sugar
  • Light brown sugar
  • Canola oil
  • Eggs
  • Vanilla extract
  • For the Cream Cheese Frosting:
  • Cream cheese, softened
  • Unsalted butter
  • Powdered sugar, sifted
  • Heavy cream

Instructions

  1. In a bowl, whisk together flour, cinnamon, baking soda, salt, ginger, and nutmeg.
  2. In a large bowl, mix pumpkin puree, granulated sugar, and brown sugar. Add canola oil, eggs, and vanilla extract; whisk until smooth.
  3. Stir dry ingredients into the wet mixture until just combined—do not overmix.
  4. Pour into a greased or parchment-lined 9×13-inch pan. Bake at 350°F (175°C) for 30–35 minutes, until a toothpick comes out clean.
  5. Let bars cool completely in the pan before frosting.
  6. Beat softened cream cheese and butter together until smooth. Gradually add powdered sugar, then heavy cream, and beat until light and fluffy.
  7. Spread frosting over cooled bars, slice into squares, and serve.
