Protein-Packed Chickpea Chicken Salad is a hearty, high-protein dish combining tender chicken, chickpeas, and fresh veggies in a creamy, tangy dressing. It’s quick to make, ideal for meal prep, and perfect served on its own, in wraps, or over greens.

Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 celery stalks, diced
  • 1/4 red onion, finely chopped
  • 1/2 bell pepper, chopped
  • 2 tablespoons fresh parsley or dill, chopped
  • 1/3 cup Greek yogurt or mayonnaise (or a mix)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (optional)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. In a large bowl, combine the chicken and chickpeas.
  2. Add diced celery, red onion, bell pepper, and fresh herbs.
  3. In a small bowl, whisk together Greek yogurt (or mayo), Dijon mustard, lemon juice, olive oil (if using), salt, pepper, and garlic powder.
  4. Pour the dressing over the chicken mixture and toss until evenly coated.
  5. Taste and adjust seasoning as needed. Chill for at least 30 minutes before serving.
