Poor Man Husband Casserole is a budget-friendly, comforting dinner made with layers of ground beef, tomato sauce, egg noodles, and a creamy cheese blend.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups tomato or marinara sauce
  • 8 oz wide egg noodles, cooked and drained
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1½ cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: garlic powder, Italian seasoning, parsley for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef and onion until browned. Drain grease and season with salt, pepper, and optional garlic powder or Italian seasoning.
  3. Stir in tomato or marinara sauce and let it simmer briefly.
  4. In a separate bowl, mix sour cream and softened cream cheese until smooth.
  5. Layer half the cooked noodles in the baking dish.
  6. Spread the cream cheese mixture over the noodles.
  7. Add the remaining noodles, then layer with the meat sauce.
  8. Top with shredded cheddar cheese.
  9. Bake uncovered for 20–25 minutes, until bubbly and golden.
  10. Let it rest for 5–10 minutes before serving.
