This Pizza Grilled Cheese Sandwich recipe is the ultimate comfort food mashup—crispy, melty, and loaded with gooey mozzarella, savory pepperoni, and rich pizza sauce. A quick, customizable sandwich that’s perfect for dinner, lunch, or a snack!

Ingredients

  • 8 slices sandwich bread (white, sourdough, or whole wheat)
  • 1 cup shredded mozzarella cheese (low-moisture preferred)
  • ½ cup sliced pepperoni
  • ½ cup pizza sauce or marinara (plus more for dipping)
  • 2 tablespoons unsalted butter, softened
  • Optional Add-ins:
    • ¼ cup sliced black olives
    • ¼ cup chopped bell peppers
    • ¼ cup sautéed mushrooms
    • 1 teaspoon Italian seasoning or garlic powder

Instructions

  1. Prep the Ingredients: Lay out the 8 slices of bread. Butter one side of each slice (this will be the outside). Flip the slices so the unbuttered sides face up.
  2. Build the Sandwiches: Spread a thin layer of pizza sauce on 4 slices (unbuttered side). Top each with ¼ cup mozzarella, pepperoni slices, and any optional add-ins. Sprinkle Italian seasoning if using. Close with the remaining slices, buttered side facing out.
  3. Cook the Sandwiches: Heat a skillet over medium heat. Place sandwiches in the skillet (1–2 at a time), pressing lightly with a spatula. Cook 3–4 minutes per side until golden brown and the cheese melts.
  4. Serve: Let rest for 1 minute. Slice and serve warm with extra pizza sauce for dipping.

Notes

  • Use thick bread like sourdough for best results.
  • Keep sauce layer thin to avoid sogginess.
  • Customize with your favorite pizza toppings.
  • Reheat in a toaster oven or skillet to retain crispness.
  • Freeze cooked sandwiches and reheat at 350°F for 10 minutes.
