These Pink Party Sugar Cookie Cups are soft, buttery, and topped with a swirl of pink frosting and sprinkles. Made in just one bowl with no chilling required, they’re the perfect festive dessert for birthdays, showers, or any celebration.

Ingredients

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113 g) unsalted butter, softened (for frosting)
  • 4 cups (480 g) powdered sugar
  • 23 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Pink food coloring
  • Sprinkles for topping

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Add flour, baking powder, and salt. Mix until a soft dough forms.
  4. Scoop tablespoon-sized portions into muffin wells and gently press to flatten.
  5. Bake for 9–11 minutes until edges are lightly golden.
  6. While warm, press the centers down with the back of a spoon to create cups. Cool completely in the pan.
  7. For the frosting: Beat butter until smooth. Gradually mix in powdered sugar, then add milk, vanilla, and food coloring. Beat until creamy and pipeable.
  8. Pipe frosting into each cooled cookie cup and top with sprinkles.
