A sweet and creamy Pineapple Pie made with crushed pineapple, buttery filling, and a flaky crust. This tropical-inspired dessert is simple to prepare and perfect for gatherings, holidays, or an easy homemade treat.

Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 can (20 oz) crushed pineapple, drained
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and place the unbaked pie crust into a 9-inch pie dish.
  2. In a large bowl, combine the drained crushed pineapple, sugar, and flour. Mix until well combined.
  3. Add the eggs, melted butter, vanilla extract, and salt. Stir until the filling becomes smooth and fully blended.
  4. If using coconut, gently fold it into the filling mixture.
  5. Pour the prepared filling into the pie crust and spread it evenly.
  6. Bake for 45–50 minutes, or until the center is set and the top is lightly golden.
  7. Remove the pie from the oven and allow it to cool completely for about 1 hour before slicing and serving.

Notes

  • Drain the crushed pineapple well to prevent the filling from becoming too watery.
  • Add shredded coconut or toasted coconut for extra tropical flavor and texture.
  • A teaspoon of lemon zest or a splash of lemon juice can brighten the pineapple flavor.
  • Serve with whipped cream or vanilla ice cream for a richer dessert.
