Ingredients

  • 2 flatbreads or naan breads
  • 1/2 cup basil pesto
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 cup cherry tomatoes, sliced
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet and lightly brush the edges with olive oil.
  3. Spread an even layer of basil pesto over each flatbread, leaving a small border around the edges.
  4. Sprinkle the mozzarella cheese evenly over the pesto.
  5. Top with sliced cherry tomatoes and parmesan cheese.
  6. Season lightly with salt and black pepper.
  7. Bake for 10 to 12 minutes until the cheese is melted and the edges are crispy.
  8. Remove from the oven and garnish with fresh basil before slicing and serving.

Notes

  • Store-bought pesto works perfectly for a faster preparation.
  • Add grilled chicken, spinach, mushrooms, or roasted peppers for extra toppings.
  • Burrata cheese can replace mozzarella for a creamier texture.
  • A drizzle of balsamic glaze adds extra flavor before serving.
  • Reheat in the oven or skillet to keep the crust crispy.
  • Avoid microwaving to prevent the flatbread from becoming soft.
  • Air fryers can also be used for a crispier crust and quicker cooking time.
