This Peruvian Chicken is a juicy, flavorful roasted chicken infused with a bold spice blend of garlic, cumin, paprika, and lime. Simple to prepare yet full of character, it’s a comforting and vibrant meal perfect for weeknights or special dinners.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons lime juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, garlic, paprika, cumin, oregano, salt, black pepper, chili powder, and lime juice until combined.
  3. Pat the chicken dry and rub the seasoning mixture all over the outside and inside the cavity.
  4. Place chicken breast-side up on a roasting rack or in a baking dish.
  5. Roast for 50–60 minutes, until skin is golden and internal temperature reaches 165°F (74°C).
  6. Remove from oven and let rest for 10 minutes before carving and serving.

  • Use chicken thighs or drumsticks for a quicker version; adjust cooking time.
  • Add cayenne pepper for more heat.
