A hearty and flavorful meal featuring tender honey BBQ glazed chicken paired with crispy roasted garlic parmesan potatoes. This comforting sheet-pan style dinner balances sweet, smoky, and savory flavors in an easy weeknight dish.

Ingredients

  • 1.5 lb boneless skinless chicken breasts or thighs
  • 1/2 cup barbecue sauce
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1.5 lb baby potatoes, halved
  • 1/3 cup grated parmesan cheese
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a small bowl, mix barbecue sauce and honey together to create the honey BBQ glaze.
  3. Place the chicken on one side of the baking sheet and brush it generously with the honey BBQ mixture.
  4. In a separate bowl, toss the halved baby potatoes with olive oil, minced garlic, grated parmesan cheese, paprika, salt, and black pepper until evenly coated.
  5. Spread the seasoned potatoes on the other side of the baking sheet in a single layer.
  6. Roast in the oven for 30–35 minutes, turning the potatoes halfway through cooking for even browning.
  7. Cook until the chicken is fully cooked and the potatoes are golden and crispy.
  8. Remove from the oven and sprinkle chopped parsley over the potatoes before serving.

Notes

  • Chicken thighs can be used instead of chicken breasts for a juicier result.
  • Avoid overcrowding the potatoes to ensure they roast and crisp properly.
  • Add vegetables like broccoli, carrots, or green beans for a complete sheet-pan meal.
  • A pinch of chili flakes can be added to the BBQ sauce for a spicy kick.
