Rich and chewy peanut butter-chocolate no-bake cookies made with cocoa, oats, and creamy peanut butter. These easy cookies come together quickly on the stovetop and set without needing an oven.

Ingredients

  • 2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick oats
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine sugar, cocoa powder, milk, and butter. Stir continuously until the butter melts and the mixture becomes smooth.
  3. Bring the mixture to a gentle boil and let it boil for about 1 minute while stirring.
  4. Remove the saucepan from heat and immediately stir in the peanut butter, vanilla extract, and salt until smooth.
  5. Add the quick oats and mix until they are fully coated with the chocolate peanut butter mixture.
  6. Using a spoon, drop portions of the mixture onto the prepared baking sheet to form cookies.
  7. Let the cookies sit at room temperature for about 20 to 30 minutes until they firm up and hold their shape.
