A rich, creamy, protein-packed dessert made with blended cottage cheese, peanut butter, and cocoa for a lighter yet indulgent chocolate treat.

Ingredients

  • 1 cup cottage cheese
  • 2 tablespoons peanut butter
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: chocolate chips or chopped peanuts for topping

Instructions

  1. Add the cottage cheese, peanut butter, cocoa powder, maple syrup (or honey), vanilla extract, and salt to a blender or food processor.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust sweetness if desired.
  4. Spoon the mousse into serving bowls or glasses.
  5. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld and the texture to firm up.
  6. Top with chocolate chips or chopped peanuts before serving if desired.

Notes

  • For extra protein, add a scoop of chocolate protein powder before blending.
  • Swap peanut butter with almond butter for a different flavor variation.
  • Add a pinch of cinnamon or espresso powder to enhance the chocolate flavor.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • If the mousse firms up too much, stir briefly before serving to restore creaminess.
  • Can be frozen for a firmer, ice-cream-like texture; let sit a few minutes before eating.
