Ingredients

  • 1 store-bought pizza crust (12-inch)
  • 1 large chicken breast (or rotisserie chicken for convenience)
  • Olive oil
  • Salt and freshly ground black pepper
  • Homemade BBQ sauce (low sugar ketchup, Worcestershire sauce, apple cider vinegar, spices)
  • 23 fresh ripe peaches, thinly sliced
  • ½ red onion, diced
  • 2 cups shredded mozzarella cheese (freshly shredded preferred)
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare homemade BBQ sauce by mixing low sugar ketchup, Worcestershire sauce, apple cider vinegar, and spices until well combined.
  3. Drizzle olive oil over chicken breast; season with salt and pepper. Bake at 400°F for 25-30 minutes until cooked through. Alternatively, use shredded rotisserie chicken. Toss shredded chicken with a few tablespoons of BBQ sauce.
  4. Thinly slice peaches and dice red onion.
  5. Spread a generous layer of BBQ sauce over pizza crust. Top with shredded mozzarella, BBQ chicken, peaches, and diced red onion. Add more cheese if desired.
  6. Bake pizza for about 20 minutes until cheese is bubbly and golden.
  7. Remove from oven; sprinkle with fresh cilantro before slicing and serving.

Notes

  • Substitute peaches with fresh pineapple or thinly sliced apples if out of season.
  • Add sliced jalapeños or red pepper flakes for extra heat.
  • Fresh basil can replace cilantro for a classic herb flavor.
  • Use gluten-free pizza crust to make this recipe gluten-free.
  • Reheat leftover pizza in a skillet or oven to maintain crispiness; avoid microwaving to prevent soggy crust.
